Mini Red Velvet Stacks are a fun, plant-based twist on a classic treat. Soft cocoa notes and a touch of tang make them perfect for brunch or dessert.
INGREDIENTS–
- 1 cup Cosmix Pancake Mix
- 2 tbsp beetroot puree
- 1 tsp cocoa powder
- 1 tsp apple cider vinegar (ACV)
- ¾ cup plant milk
TOPPINGS (optional but recommended!)
- Vanilla cashew cream
- Berry compote or chia jam
- Cacao nibs
- Coconut whipped cream (optional)
- Fresh mint
INSTRUCTIONS–
🥣 In a bowl, mix pancake mix with beetroot puree, cocoa powder, ACV, and plant milk until smooth.
🥞 Cook mini pancakes (coin-sized) on a lightly oiled pan until fluffy and set.
🍴 Stack 3–4 mini pancakes in a tower or on skewers. Layer with cashew cream between pancakes, add a spoonful of berry compote, sprinkle cacao nibs, and finish with fresh mint and optional whipped cream.
