INGREDIENTS–
- 1 scoop of coconut peppermint no-nonsense plant protein
- 2 tbsp almond or oat flour*
- 1 tbsp shredded coconut
- 1 tbsp maple syrup or honey
- 1 tbsp almond milk** (adjust as needed)
- ½ tbsp melted coconut oil
- ⅛ tsp peppermint extract (optional)
- ¼ tsp baking powder
- Pinch of salt
- Dark chocolate chips (optional)
*can substitute with regular flour

INSTRUCTIONS–
♨️Preheat oven to 175°C (350°F) and line a baking tray.
🥣Mix dry ingredients in a bowl.
👩🏻🍳Add wet ingredients and mix into a dough. Adjust almond milk if needed.
🍪Shape into a cookie, top with chocolate chips if desired.
