Ingredients:
- ¼ cup Cosmix No-Nonsense Plant Protein Pancake Mix – Chocolate
- 3–4 tbsp water or plant-based milk
- ½ tsp coconut oil (for cooking pancakes)
- ½ cup brewed black coffee (cooled)
- 1–2 tsp maple syrup (optional, to sweeten coffee)
- ¼ cup coconut cream (chilled overnight for thickness)
- 1 tbsp cashew butter
- ¼ tsp vanilla extract or powder
- 1 tsp maple syrup (for cream)
- Unsweetened cacao powder (for dusting)
How to make:
1️⃣ Make the pancakes
- Mix pancake mix with water/milk until smooth.

Heat a non-stick pan, grease lightly, and cook 4–6 small pancakes. Cool completely.
2️⃣ Prepare the coffee soak

Mix cooled coffee with maple syrup (if using).
3️⃣ Make the vegan “mascarpone” cream

In a blender, whip coconut cream, cashew butter, vanilla, and maple syrup until smooth and fluffy. Chill until ready to use.
4️⃣ Assemble your tiramisu
- Quickly dip a pancake into the coffee soak (don’t let it get soggy).

Layer in a glass or dish: pancake → cream → cacao dusting → repeat.
