Strawberry Protein Barks

Ingredients (for ~6 small barks):

  • 1/2 cup vegan dark chocolate (or cacao chips)

  • 2 tbsp Cosmix Mahabaleshwar Strawberry Plant Protein

  • 1 tbsp coconut oil

  • 1/4 cup freeze-dried strawberries (or chopped fresh strawberries, lightly dried)

  • 1 tbsp slivered almonds (optional)

  • Pinch of sea salt

Instructions:

  1. Melt the chocolate & coconut oil:

    • In a microwave-safe bowl or over a double boiler, gently melt the chocolate and coconut oil until smooth.

  2. Add protein:

    • Stir in Cosmix Mahabaleshwar Strawberry Plant Protein until fully incorporated.

  3. Prepare baking tray:

    • Line a small tray or plate with parchment paper.

  4. Spread & top:

    • Pour the chocolate-protein mixture onto the tray and spread into a thin layer (~1/4 inch thick).

    • Sprinkle the freeze-dried strawberries, slivered almonds, and a pinch of sea salt on top.

  5. Set:

    • Place in the fridge for 30–40 minutes until firm.

  6. Break & serve:

    • Break into bark-sized pieces and enjoy!

    • Store in an airtight container in the fridge for up to 1 week.

Tips:

  • For extra indulgence, drizzle a little vegan white chocolate on top before chilling.
